Pompe à huile recipe

One of the 13 Provençal Christmas desserts

To keep you busy during the Christmas holidays we offer this recipe to make with your children. The oil pump is the queen of 13 Christmas desserts.

For 4 people:


 - 20 g of baker's yeast

 -500 g flour

 -1 dl of olive oil

 -125 g caster sugar

 -1 C. 1 teaspoon anise seeds

 -7 c. orange blossom water

 - grated zest of one orange

 -1 pinch of salt.


Mix the yeast in 3 tablespoons of warm water. In a large container (the dough obtained will double in volume), mix yeast, flour, olive oil, sugar, salt, anise seeds, water and orange blossom water. Knead the dough and let it rise for 3 hours in a warm place, the container covered by a cloth.

The dough therefore doubled in volume. on a baking sheet, which you will have previously oiled, spread the dough to obtain a patty. Let stand again for 1 hour, still in a warm place. Preheat the oven th. 7. Cut with the tip of a knife. Cook in the oven for 15 min.
